Dinner isn’t very exciting, but it’s tasty! This is egg roll in a bowl (ERIAB). I know there are recipes out there, but I’ve never used one, so can’t recommend one in particular. My version is simply one pound of ground pork, a bag of rainbow salad (broccoli, and other stuff), some diced onion (frozen), coconut oil, fish sauce (@redboatfishsauce), coconut aminos, garlic, ginger, onion powder, and salt. Just brown the meat, and then add everything else. It takes only a few minutes, and dinner is served
Pizza Time!
Not the best pic, but wanted to share what I had for lunch, because it’s so good! This is not totally paleo, because of the cheese, but I’m doing 80/20 anyway, and trying cheese this time to see how I feel. In any event, this is 1 pound of ground beef, browned, with diced onions and green peppers, @wildtreeofficial Pizza Sauce Seasoning, a package on @applegate pepperoni (cut into smaller pieces), and a 6oz package of @organicvalley mozzarella Clickable link to recipe in profile: http://wp.me/p5Nr2J-xP
Pumpkin Spice Smoothie
Another day, another pic of Winston wanting my breakfast smoothie! Today’s was 1/2 cup coconut milk, 2 eggs, pumpkin puree, cinnamon, ginger, nutmeg, vanilla, a handful of ice, and water to fill to the line. You can find a similar recipe, that’s not low carb (includes banana), in the 21DSD cookbook.
Campfire Meal Leftovers
We’re finishing up the campfire meal leftovers for breakfast, because we’re packing up to head back east. I threw some chopped bacon, leftovers, and Butt Rub into a skillet, and heated until done. This was tasty, and now the trailer fridge is almost empty, so less to unload but not because of the potatoes
