Day 2, done! Breakfast was ropa vieja with riced cauliflower (link to recipe in profile). Lunch was leftover carnitas with more riced cauliflower. Dinner was a sirloin steak, sweet potato, and steamed broccoli and carrots at Texas Roadhouse. Everything was plain, no butter, and no seasoning.
