Dinner was “Arroz” con Pollo, with riced cauliflower in place of the rice. I don’t think I have a recipe written down for this! It’s boneless/skinless chicken thighs, dusted with salt, pepper, garlic powder, and turmeric, and then seared in EVOO. Then I removed the chicken from the pan, scraped all of the junk that stuck to it, added a little more oil, and sauteed diced onion, Italian cut green beans, and chopped red bell pepper. Finally I added the chicken back to the pan, along with the riced cauliflower, and added some more spices until it tasted right
