Meal 2 for day 1 is carnitas over baby arugula, with a bit of guacamole for extra fat. I used the recipe @meljoulwan has on her web site, with one, small addition: a white onion! I just peeled and quartered it, then threw it in with everything else. If you haven’t tried this recipe, you should fix that. Now!
