I’m back from Texas, y’all! My eating and sleeping really suffered last week, as I was stuck in the convention center, mostly at my booth, from 7am until at least 5pm most days. While I tried to stick with the plan, and did a decent job, I know some junk slipped by me. How do I know? Because by day 3, I was bloated, my back hurt, and I had a (not so) lovely rash on my face. I’m getting back on track today, with a Monday brunch (slept through breakfast) of 3 eggs, peppers, onions, and diced tomatoes, all cooked in avocado oil, and topped with black olives and hot sauce. I also added a nice, big mug of pumpkin spice tea with coconut milk.
